Syrian-style Cabbage Salad

This is a recipe contribution by a dear friend, Christine Dutton from Mediterranean Living, who went through a lot of trouble to find an authentic Syrian recipe that she adapted to North American taste and ingredients so it could be easily made by everyone, specially if someone is looking to welcome a new guest from that part of the world into their home.


4 Tbsp extra virgin olive oil, divided
4 cups thinly sliced napa cabbage
1 zucchini, sliced
1 green pepper
1 peeled cucumber, chopped
1 large tomato, chopped
1/4 cup chopped parsley
4 Tbsp extra virgin olive oil
Juice of one lemon
Zest of one lemon
2 crushed garlic cloves
salt and pepper to taste

Heat 1 Tbsp olive oil in a skillet. Saute cabbage on medium heat until soft, about 5 minutes. Set aside. Heat additional 3 Tbsp olive oil in the skillet and add zucchini. Fry on one side on medium heat for about 3-4 minutes, and then other side for 2-3 minutes, until lightly browned. Add extra olive oil as needed. Mix the cabbage, green pepper, tomato and parsley in a bowl. Whisk together the olive oil, lemon juice, lemon zest garlic and salt and pepper to taste. Add the dressing to the salad and mix together. To plate, place sliced zucchini around the edges of the plate and scoop the salad into the center.
