I go through phases, just like everyone else does. The one phase I go through a lot, apart from the attempts of trying to grow my hair long every couple of years, is the desire to be a vegan or at the very least a vegetarian. It usually lasts anything from a few weeks to a few months with the longest stretch being for 2 years, but that ended with the uncontrollable urge to enjoy a Big Mac (I was 19 yrs old at the time!).
This is one of my vegan weeks, hence the Orange spiked Tofu Corn Tacos. Whilst everyone else enjoyed the Chicken version of these, I had to make a vegan version for me.
During my recent road trip across Texas and New Mexico, I purchased a packet of Gluten Free Corn Tacos.
These were super easy to use, and all I had to do was grill them on the BBQ for a couple of minutes.
Orange spiked Tofu
Slice some extra firm tofu into long strips and grill them on a BBQ for a couple of minutes on each side.
In a pan, I heated up a little Avocado oil and orange juice, taken from a fresh orange and sprinkled some low sodium Taco spice mix. Add the Tofu strips and sprinkle some freshly chopped cilantro.
I should have taken the picture before I let people eat from my little Taco bar, but it slipped my mind.
I made some fresh Corn Salsa using grilled Corn kernels, and some vegan cheddar cheese that I crumbled by hand. There’s lots of Jalapenos and fresh cilantro in this Salsa, and made using just salt, pepper and lime juice.
Instead of Sour cream I used some vegan soft cheese, mixed with some lemon juice, salt and pepper and it worked beautifully.
Some super hot Ghost Pepper Salsa completed the topping with some fresh Jalapenos for some added crunch.
Being vegan is not so bad after all !!
