Mixed Lentils and Carrots Soup

Its bitterly cold outside today and the temperature in my freezer is a lot warmer than what is outside the front door! The perfect day for a hearty warm lentil soup …. simple, easy and absolutely fantastically beautifully amazingly delicious! I am gulping down this bowl of soup as I write the post, and since my bowl has the added extra Sriracha sauce, its perfect mouth burning, heart warming and ear buzzing heaven!


Mixed Split Lentils Soup with Carrots  1 cup mixed split lentils 2 tbsp oil 1 large potato, diced 1 medium size onion, finely chopped 2 carrots, diced 3 tbsp dried basil 4 cups Chicken Stock (or Veg stock) Salt and black pepper Sriracha sauce to drizzle on top – optional and to taste Heat oil in a pot and stir in the onions. Saute until they have softened and turn translucent in colour.

Add the onions and carrots, followed by all the remaining ingredients, save the Sriracha sauce. Bring the soup to a boil, reduce the heat, cover the pot and let it simmer for at least 1 hour. Serve hot, and stir in some Sriracha sauce on top for those who love the heat in their soup.

Its perfect even without the hot sauce, so much so that my fussy 9 year old son finished his bowl of soup before he realised he hadn’t complained about the carrots and lentils in the soup!
